PECAN OATMEAL COOKIES
4 oz unsalted butter
3/4 cup dark brown sugar (I used light)
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup all-purpose flour, fluffed and scooped
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt (if using salted butter, decrease to 1/4)
1/2 cup toasted, crushed finely pecans
1 cup toasted, barely chopped pecans
1 cup raisins
1 1/2 cups old-fashioned rolled oats
Preheat oven to 350 degrees F. Beat butter and both sugars until creamy. Add egg and vanilla and beat well.
Combine flour, baking soda, cinnamon, nutmeg and salt and mix thorougly. Add oats, raisins, nuts and stir to combine. Shape into 2 dozen balls. Bake on parchment lined baking sheets for 11-13 minutes.
Makes about 2 dozen cookies, depending on size.
